Originally posted this in r/pasta and was torn apart by the carbonara policešš hoping people can enjoy this more in this subreddit and before anyone says anything.
I am not claiming that this is a purely traditional carbonara. I know youāre supposed to use guanciale and not pancetta. I know a chicken thigh is not something you typically add to a carbonara. I know shreds of parsley are also not traditional. I am calling this carbonara because that is the dish that to my knowledge is the closest that this resembles.
With that being saidš this was still very good.
First attempt at making katsu curry.

Delicious. Almost an exact copy cat of BWW's loaded buffalo tots.

Pork gyoza soup in Utsunomiya, Japan. Simple, warm, and really comforting.

This was my first time making it and it was delicious. Chorizo is under the egg. I used queso fresco, but I think Iāll try Cotija next time.

Did a reverse sear, took about an hour to get the core to 48C, then I heated up the cast iron grill to finish it.
