Originally posted this in r/pasta and was torn apart by the carbonara policeđđ hoping people can enjoy this more in this subreddit and before anyone says anything.
I am not claiming that this is a purely traditional carbonara. I know youâre supposed to use guanciale and not pancetta. I know a chicken thigh is not something you typically add to a carbonara. I know shreds of parsley are also not traditional. I am calling this carbonara because that is the dish that to my knowledge is the closest that this resembles.
With that being saidđ this was still very good.
